Plant Based Desserts| Banana Parfait | Easy Treats

Sometimes you want to treat your kids to the fun stuff like ice-cream and chocolate and if you can do it in a healthy way then why not?


One of the reasons I love this particular desserts is because it is full of antioxidants, fiber and protein!



What's in that ice cream?

The top is banana nice cream. We're talking vitamins, fiber, potassium, magnesium and antioxidants.

All these things are going to help keep your gut health in check, give you an instant energy boost and lower your risk of muscular cramps.


What about that brown stuff?

This is a tofu based mousse. Full of protein, amino acids, iron, calcium and that "good" cholesterol that protects our hearts against strokes and attacks.


To be honest these are all ingredients that I tend to use quite frequently (besides the tofu) so a quick search through my blog will give you the low down on all the way these ingredients can benefit your family's inner health.



Alrighty then... Hit me with how difficult it is to make!

Not difficult at all!! I mean the only hard part was trying to take the photo while my son's little hands kept grabbing at all the fruit hahaha



All you will require for the nice cream is a couple of frozen bananas and a bit of almond milk

(& a little bit of maple syrup to taste IF you choose)

Literally blitz the two bananas and a quarter of a cup of almond milk in a food processor until they come to a creamier consistency. If you want it a bit creamer, add a tablespoon of coconut cream and if you want it a little bit sweeter add a tablespoon of maple syrup. TADA!


The chocolate mousse requires a few more ingredients though...

1 packet of silken tofu

2 - 4 tablespoons of maple syrup

2 tablespoons of cacao and

a drop of vanilla extract

2 tablespoons of chia seeds

& then...

And then blitz all the ingredients (besides the chia seeds) in a food processor. Once done stir through the chia seeds and set aside in the fridge until it becomes a thicker consistency.

Before the chocolate thickens dip the lip of the jar into the mixture and then into your crushed nuts ;)
