It's been discussed in the past how much my son is into chia seed pudding. So much so that his little poos are after full of chia seeds.
Did you need to know that? Of course not, but I wanted to tell you anyway...

How to make his favourite flavour... and just how awesome it is as a snack for anytime of the day!
I don't need to go into the nitty gritty of how good chia seeds are for you but you can read a little bit about that here. However I will quickly mention that this particular form of pudding is full of MCTs (Medium Chain Triglycerides) which are known to aid in weight loss and a reduction in waist size... What you can loose weight by eating?!
But MCTs are so much more than that. MCTs also assist in treating food absorption disorders, such as liver disease, celiacs, digestion issues and even diarrhea. It is believed that the consumption of MCTs can assist in creating lean muscle, reducing body fat and increasing exercise performance, so MCTs are often used as nutritional supplements.
It is also believed that MCTs can prevent Alzheimer's Disease, since MCTs can be used as an immediate source of fuel for your brain.
Whether this is all true or not, what have you got to loose by eating something tasty made with clean ingredients??
1/3 cup chia seeds
1 cup coconut water
400ml coconut milk
1 tablespoon cold-pressed coconut oil (melted)
1 teaspoon of cinnamon
1 teaspoon vanilla extract
1 tablespoon maple syrup (optional)
How to make
Mix all the ingredients to combine and place in fridge for a couple of hours until thick and gelatinous
Sometimes I eat it plain and sometimes I layer it with different ingredients. & pretty much anything goes!!
Berries, nuts, cacao nibs, granola, ice-cream, yoghurt and sometimes all of the above.
For this blog I layered it with almond yoghurt, homemade strawberry jam and figs.
& it was AMAZING!!!
