This breakfast is so unbelievably easy that I actually feel bad that I don't make it more often.
To be honest it can be a breakfast, a dessert or a snack and it is full of goodness!! Like JAM PACKED!!
Where do I start?
Chia seeds the powerhouse of all foods. Something that I like to sneak into EVERYTHING because they can literally go on and into anything.
Firstly I'm going to start with a very interesting non-fact. Chia seeds can damage cancer cells. I mean even if it's not true what do you have to loose because there's plenty of other health benefits and if it is true than BONUS!! And now for the facts.
Chia seeds are high in fibre and protein. So not only will they help keep you feeling fuller longer, but they will help your guts smile.
Chia seeds are an awesome source of plant based omega-3 essential for brain function, glowing skin, immunity and a healthy heart. Actually in saying that, only plant based omega-3s will assist your body in lowering cholesterol.
Chia seeds are high in calcium and magnesium, vital for growth and repair of both bone and muscle and they are a natural anti-inflammatory, aiding in joint repair.

Chia seed pudding is something I have been feeding to my son ever since he turned around 8-9 months old.
The reason I started is because he ate one of those Only Organic Cacao and Berry pouches and absolutely LOVED it but I wasn't in love with the ingredients, so I wanted to make something similar for him.


This is all you need for a super simple creamy cacao pudding
1/3 cup chia seeds
1 cup almond milk
1 tablespoon cacao powder
1 tablespoon maple syrup
1/2 teaspoon vanilla extract
1/4 cup frozen raspberries, crushed
& this is how you make it...
Mix all ingredients together and place in fridge overnight (or a couple of hours)

I've made this one parfait style by layering it with almond butter, raspberries and some leftover home made chocolate, which you can find here
