This is literally my go to breakfast!!
I eat it practically everyday so I ALWAYS have it stocked in my cupboard & it is something you will see a lot of if you follow my food posts.
It's also the thing that my friends request I make for them the most. I always tell them to make it for themselves because it's sooooo simple but I'm not sure that they ever do because no one has ever returned the favour *hint hint*

Why is it so popular?
Besides being absolutely delicious, you can eat it pretty much how ever you like. You can eat it like a cereal. Paired with yoghurt. With ice-cream. Served with coconut cream. In smoothie bowls. Toppings on desserts. AND it's even fantastic to snack on exactly as it is.
It tastes too good, it can't be healthy!!
I'm no nutritionist so feel free to take my word with a grain of salt, but from my personal experience & research, I'm going with yes.
While I had gestational diabetes I was able to eat this with no issues at all because it rates very low on the glycemic index. Meaning the carbohydrate content of this granola is slowly absorbed into the bloodstream, preventing any sudden spikes in blood sugar.
Because the base of this granola is buckwheat your body is going to be rewarded in the following ways:
You will do happy poos, because it's full of fibre!! Which means, it helps food move nicely along our digestive tract.
Actually, because of the fibre content it will keep you feeling fuller longer, which is great for weight management.
& because buckwheat is a good source of vegan protein, it is great for muscle growth, repair and fat loss.
AND
It is also believed that buckwheat can help prevent the spread of cancer!!
Although this granola is high calorie, it's easily digested and metabolised by our amazing bodies because it's all HEALTHY calories.
This is provided we treat our bodies right by avoiding refined sugars, refined carbs and unhealthy fats.
Well stop rambling and tell me how to make it...


I have never really measured anything out the "classic" way for any of my granola or muesli mixes (I will share how to make a paleo muesli another day) because measuring is fo' fools yo. I pretty much just chuck in whatever I feel like on the day & I urge you to do the same.
So let me tell you what is in my current mix...

Ingredients for roasting
2 cups of buckwheat (soaked overnight, drained, rinsed and dried between two tea towels)
1 handful of almonds
1 handful of cashews
1 small handful of pumpkin seeds
1 small handful of sunflower seed
1 small handful of pine nuts
1 small handful of flaxseeds
1 small handful of sesame seeds
1 handful of chia seeds
2 tablespoons of coconut oil
1/2 a cup of maple syrup
1 heaped tablespoon of cinnamon
The rest of the ingredients
1 handful of hemp seeds
1 handful of dried goji berries
1 handful of currants
1 handful of dried mulberries
6 dried figs, sliced
How to make
Pre-heat the oven to 160
Toss all the "for roasting" ingredients together in a large bowl and give it a good stir, with a wooden spoon. The mixture should be lightly coated, and not wet.
Divide the mixture onto two lined baking trays
Bake for 45-55 minutes, until golden & fragrant, tossing about half way through to make sure everything bakes evenly
Remove from oven and let cool
Toss through the rest of the ingredients
& that is it!!
Voila. Granola.
